Christine Luken: Sharing some warm, cozy ‘batch’ soups for those cold, dreary days of winter


We know the spring is inevitably coming, but it still feels like we’re in the grasp of Old Man Winter. When it’s cold and dreary outside, nothing else makes me feel as warm and cozy as a bowl of soup, chili or stew. The best thing about these dishes is that they are easy to prepare, relatively inexpensive, and can be made in large batches.

The beauty of batch cooking soup, chili or stew is that it doesn’t take two or three times the amount of effort to cook a double or triple batch of your favorite recipe.

Plus you only have to prepare and chop ingredients – and do dishes – once!

I like to do my batch cooking on the weekends when I have a little extra time for it. I will then freeze my extras in both family-sized and individual-sized portions. This makes it easy for me to use my freezer meals on busy nights or have a cup of soup for lunch.

Homemade soups and stews are much tastier, cheaper, and healthier than the ones sold at the grocery store. And I promise you, there’s nothing better when you are feeling under the weather, knowing that there’s homemade chicken soup in the freezer waiting to be reheated and enjoyed!
